Ingredients:

2 cups glutinous rice flour(giniling na malagkit)
1 cup water (para sa palitaw, unti unti lamang ang lagay)

¾ to 1 cup Sugar (i-adjust sa nais na tamis, yung sakto lamang)
½ cup buko strips (I used macapuno in bottle)
3-4 cups tubig (para sa arnibal)
langka strips (optional for added flavor)

For Latik
1 can coconut milk or cream, pde rin ang coconut cream sa lata.

Procedure

Para sa Latik:

Pakuluin ang coconut milk sa kawali hanggang matuyo at langis na lang ang matira. Haluin hangang maging golden brown at magbuo buo ang gata. Iwasan masunog, gumamit ng medium to low fire. Ihiwalay ang latik sa coconut oil at saka ilagay sa nilutong palitaw na may arinibal.

Para sa Palitaw:

Imasa muna ang powder malagkit sa kaunting tubig hanggang makagawa ng dough like mixture. Unti unting ilagay ang tubig, hangang maging dough like at sakto ang lagkit at namumuo muo na. Magdust ng palad gamit ang flour at kumuha ng kapiraso. Magform ng pabilog at i-flat sa palad upang maging hugis na palitaw at ninanais.

Tip: Kung masyado mlagkit, budburan lamang ng konting glutinous flour para makuha ang tamang consistency or dough like texture.

Gumawa ng arnibal: Magpakulo ng kaunting tubig 3 or 4 cups at saka ilagay ang sugar for 5 minutes.

Antayin kumulo at saka ihulog ang ginawang dough ng palitaw at isunod ang buko strips. Hintaying lumutang ang mga palitaw. Luto na ang palitaw mo kapag ito’y lumutang na sa tubig or arnibal. Serve with latik toppings. Enjoy!
